Baking pan size chart: how to pick the right size

Choosing the right baking tray or dish comes down to what you’re cooking and how big your oven is. Smaller tins are good for individual portions or for bakes you want to cook fast. Medium-sized trays are ideal for brownies and tray bakes and galettes or tarts. Larger trays are best for baking cookies, because these spread in baking and need room to bake evenly. Larger trays are also good for batch bakes and for family-sized recipes.  

To check a tray or dish will fit in your oven, measure you oven shelf’s width and depth, allowing room for around the edges for airflow. Always measure bakeware via the internal dimensions for a more accurate guide of cooking capacity. Depth is also important, and really affects how a bake will cook up in the oven. Deeper dishes are best for bakes that will have expansive rise, such as cheesecakes, souffles and custards. Shallower dishes are best for dishes that you want to be able to easily remove such as brownies, galettes and tarts.

There are times when it’s advisable to set your cake tin or dish on a baking tray for an easier experience. This helps to catch spills and bubbling sauces in dishes such as cobblers, crumbles, or dishes with caramels or cooked fruit. The baking tray makes it easier to lift the tin in and out of the oven as well as providing a surface to catch any overspill which would otherwise fall and cause a mess of the bottom of your oven.

How to organise baking equipment
