The new year is a time for reset and restraint Im always ok at the reset piece, but the restraint part I find hard, or in truth, impossible! As far as Im concerned, January is one of the hardest months to endure- cold weather, dark evenings, and all the festive excitement a thing of the past. Eating delicious and indulgent food is an absolute must, as is using up all the bits and pieces left lurking in my fridge from Christmas. Cheese is always one of them. This cheesy soda bread is delicious, comforting and so easy to make. Stuff it with your favourite sandwich fillings, serve it with soup or enjoy it on its own.

Method⁠:

  1. Preheat the oven to 200’C/180’C fan/gas 6 and grease the small Nest roasting tin with a little butter.
  2. Measure the flour, bicarbonate of soda, salt and ¾ of the cheddar cheese into the large Nest bowl. Mix together and then pour in the buttermilk. Very gently mix until a soft dough forms. Use your hands to shape it into a rough ball and transfer it to the prepared roasting tin. Press the dough down so that it fills the tin.
  3. Press the brie pieces into the surface of the bread and scatter the remaining cheddar cheese on top. Bake in the oven for 40 minutes, until golden and risen.
  4. Allow to cool slightly before removing from the tray. It is best served warm and eaten within a day of being baked. It freezes perfectly so if you think you won’t eat it all within a day, slice and freeze to enjoy at a later date.

    70g brie, cut into small cubes
