In the summer, simple cooking is the way forward. This easy grilled courgette, halloumi and lentil salad from @boroughchef ticks every box.

This grilled courgette, halloumi and lentil salad makes a brilliant, protein-packed side for any barbecue spread. Try it with our BBQ utensil set for easy veg turning.
- Step 1In a small bowl or jug, mix together the thyme, olive oil, a little lemon zest, salt and pepper.
- Step 2Light the barbecue or place a large griddle pan over a medium heat. Meanwhile, in a large mixing bowl, stir together the lentils, shallots, mint, parsley, honey, juice of the lemon, salt and pepper to taste.
- Step 3Add the slices of halloumi and courgette to the grill or barbecue, and baste with a little of the thyme oil. When golden on the underside, turn. Cook until well coloured on both sides.
- Step 4Stir the courgette ribbons and halloumi into the lentil mixture and serve.
- 2 large courgettes, sliced into thick strips on a mandoline
- 2 x 250g blocks halloumi, cut into 1cm thick slices
- 1 small shallot, finely diced
- 1 tbsp mint leaves, chopped
- 1 tsp runny honey
- 6 thyme sprigs, picked
- 2 tbsp olive oil
- Salt & pepper
