Pesto-dressed raw courgettes
Eating courgette raw maximises your body's absorption of its vitamin C and fibre. This easy, no-cook salad can be dressed multiple ways, depending on your mood.

Raw courgette provides a beautiful blank canvas for all sorts of flavour-packed dressings. Here we've dressed the vegetable with pesto, but you could use harissa or a lemony vinaigrette just as successfully. Recipe by @pickled_plates_food_stylist.
- Step 1Use a mandoline or vegetable peeler to slice the courgettes into fine ribbons.
- Step 2Place in a bowl and mix with the pesto and half the basil leaves.
- Step 3Arrange onto a platter then garnish with the remaining leaves, pine nuts and lemon zest.
- 2 courgettes, 1 yellow, 1 green
- 2 tbsp fresh pesto
- 1 handful basil leaves
- 2 tbsp toasted pine nuts
- 1 lemon, zested
