Pesto-dressed raw courgettes

Eating courgette raw maximises your body's absorption of its vitamin C and fibre. This easy, no-cook salad can be dressed multiple ways, depending on your mood.

Raw courgette provides a beautiful blank canvas for all sorts of flavour-packed dressings. Here we've dressed the vegetable with pesto, but you could use harissa or a lemony vinaigrette just as successfully. Recipe by @pickled_plates_food_stylist.

  • Step 1Use a mandoline or vegetable peeler to slice the courgettes into fine ribbons.
  • Step 2Place in a bowl and mix with the pesto and half the basil leaves.
  • Step 3Arrange onto a platter then garnish with the remaining leaves, pine nuts and lemon zest.
