Perfect for hosting, this dip comes together in minutes yet feels gourmet – and it’s miles tastier than anything you’ll find on a supermarket shelf. Creamy ricotta, nutty pistachios, fresh basil, and zesty lemon combine into a velvety, flavour-packed dip that will have your guests coming back for more. Serve with crusty bread, crunchy crudités, or warm tortilla chips, and watch it disappear. Not to mention it's nutrient-rich with nuts and cheese providing ample protein and fibre.

Method
Ingredients
  • Step 1Toast the pistachios in a dry pan, then transfer to a plate to cool.
  • Step 2Chop the pistachios, reserving 50g for serving, and add to a pestle and mortar and crush.
  • Step 3Add all the ingredients to a food processor and season well. Blend until smooth then transfer to a serving bowl, topping with the reserved pistachios.
  • Step 4Serve with crusty bread, crudités or tortilla chips for dipping.
