Nothing says “love” quite like a home-cooked meal and our carbonara recipe, while easy to make, is guaranteed to warm the heart – and please the stomach. So, light the candles, get the Spotify playlist going and uncork a bottle of red (or whatever your tipple of choice is), we’ve got date-night at home covered.
Method
- Finely chop the pancetta into small cubes.
- Grate the two cheeses, mix together and beat 3 eggs in a separate bowl.
- Cook the spaghetti in salty water (see packet instructions for timings).
- Place a frying pan on the hob, add the butter and wait until melted.
- Squash and add the garlic cloves and pancetta to the pan and stir.
- Remove the garlic cloves from the mix when the pancetta is crispy.
- When the pasta is cooked, drain. Make sure to save a little of the pasta water.
- Add the pasta to the pancetta mix and stir.
- Add the eggy, cheesy mix to the pasta and stir to avoid the egg cooking.
- Add in the extra pasta water if needed to loosen the mixture.
- Season with extra cheese and some herbs.
- Serve – and enjoy those date-night brownie points.
