Nothing says “love” quite like a home-cooked meal and our carbonara recipe, while easy to make, is guaranteed to warm the heart – and please the stomach. So, light the candles, get the Spotify playlist going and uncork a bottle of red (or whatever your tipple of choice is), we’ve got date-night at home covered.

Method

  1. Finely chop the pancetta into small cubes.
  2. Grate the two cheeses, mix together and beat 3 eggs in a separate bowl.
  3. Cook the spaghetti in salty water (see packet instructions for timings).
  4. Place a frying pan on the hob, add the butter and wait until melted.
  5. Squash and add the garlic cloves and pancetta to the pan and stir.
  6. Remove the garlic cloves from the mix when the pancetta is crispy.
  7. When the pasta is cooked, drain. Make sure to save a little of the pasta water.
  8. Add the pasta to the pancetta mix and stir.
  9. Add the eggy, cheesy mix to the pasta and stir to avoid the egg cooking.
  10. Add in the extra pasta water if needed to loosen the mixture.
  11. Season with extra cheese and some herbs.
  12. Serve – and enjoy those date-night brownie points.

    50g pancetta

    25g perorino cheese

    25g parmesan

    2 eggs

    200g spaghetti

    1 garlic clove

    25g unsalted butter

    Salt + pepper to season
